The REGIONAL CURED SHEEP CHEESE SÃO JULIÃO 300gr FROM ALENTEJO is a cheese with typical flavour of sheep, matured in a controlled environment and slightly acidic flavor. It is a product of semi-soft paste obtained by coagulation and draining of the raw milk of whole sheep, by mixed fermentation, enzyme and lactic, with the addition of rennet and subjected to a curing process which causes chemical, physical and organoleptic changes of the product.
